For the Cake:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk
For the Topping:
- 4-5 ripe plums, pitted and sliced
- 1/2 cup almond meal (ground almonds)
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, melted
- 1/4 teaspoon almond extract
- Sliced almonds for garnish (optional)
- Powdered sugar for dusting (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or springform pan, and set aside.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using an electric mixer.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry flour mixture to the wet ingredients, alternating with the milk, starting and ending with the flour mixture. Mix until just combined, being careful not to overmix.
- Spread the cake batter evenly into the prepared cake pan.
- Arrange the sliced plums on top of the cake batter in a single layer, slightly overlapping each other.
- In a small bowl, combine the almond meal, granulated sugar, melted butter, and almond extract to make the topping mixture. Stir until well combined.
- Sprinkle the almond topping mixture evenly over the sliced plums.
- If desired, sprinkle some sliced almonds on top of the cake for extra crunch and decoration.
- Bake the Plum and Almond Louise Cake in the preheated oven for 35-40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely.
- Once cooled, dust the top of the cake with powdered sugar for a decorative finish.
- Slice the Plum and Almond Louise Cake and serve it warm or at room temperature.
